Corned Beef Hash

  • Potato Mash (to make a layer about 1″ thick in your pot)
  • 3 Eggs
  • Peas
  • 1 Tin Corned Beef
  • Cheese
  • Tomato (Optional)

Boil then mash the potatoes, hard boil the eggs, and then dice the corned beef, the eggs and the tomato. Mix the peas, beef, tomato and egg, cover with the mash in a casserole dish and sprinkle with cheese. Put in a hot oven until the cheese is browned on top.

Can be eaten unaccompanied, but goes quite well with buttered bread.

If you’re making a large quantity to split into tubs for portable reheatable meals, it works quite well. Leave out the egg, though, as the egg tends to go rubbery when reheated in a microwave.
